    Descriptive info: Torta Rustica With Roasted Peppers and Smoked Mozzarella.. Appetizers and Snacks.. Pasta and Entrees.. Printer-friendly version.. Ingredient List:.. ½ 17.. 3-ounce box puff pastry (1 sheet).. 8 ounces smoked part-skim mozzarella, grated.. 1 cup part-skim ricotta cheese.. ¼ cup grated Parmesan cheese.. ¼ cup prepared pesto.. 3/4 cup fine, dry breadcrumbs.. 1 13.. 75-ounce jar artichoke hearts, drained, dried on paper towels, and quartered.. 14 ounces prepared caponata.. 1 12-ounce jar roasted peppers, drained, dried on paper towels and sliced.. 1 egg, beaten.. 2 teaspoons sesame seeds.. Preheat oven to 400 degrees F.. Cover a sheet pan with parchment paper.. On a lightly floured surface, roll out the sheet of puff pastry to a 14-inch square.. Lay it on the parchment paper.. In a medium bowl, blend  ...   1/4 cup breadcrumbs.. Lay the roasted peppers on top and then spoon on the remaining cheese mixture.. Sprinkle with the last ¼ cup breadcrumbs.. Pull up the sides and corners of the puff pastry to cover the filling.. Pinch the seams together to seal them.. Pat the torta into a nice square block.. Brush the torta all over with egg and sprinkle with sesame seeds.. Bake 35-40 minutes, until very brown and beginning to ooze cheese.. Let sit 10 minutes before slicing.. Serves 18 as an appetizer (8 as an entrée).. Olson started working with the NDWC in 2006, handling promotion activities for foreign buyers including trade team arrangements, providing quality and supply and demand information to customers, statistical and market analysis and marketing information to producers, and assisting with communication efforts.. She grew up on a family farm near Mohall, ND and received B.. and M.. degrees in agricultural economics.. “Erica will be a great leader for the Wheat Foods Council and her strong marketing background will be an important asset in the coming year,” said WFC President Judi Adams.. “The Council will be continuing our focus on the dietitian community, while also expanding to incorporate extension agents and consumer affairs representatives in our public relations outreach.. ”.. In the letters, WFC President Judi Adams, MS, RD, noted that while the intent of the article may have been to encourage people to make healthier choices by including more whole grains in their diets, she took strong issue with the portrayal of enriched flour as unhealthy.. Ms.. Adams pointed out that enriched flour is the primary source of folic acid as well as other B vitamins in the American diet.. “The Centers for Disease Control and Prevention (CDC) acknowledges that enriched grains (primarily wheat), rather than supplements, are responsible for dramatically lowering the rate of neural tube birth defects by approximately one-third in the U..  ...   observed.. The WFC also took issue with the article’s implication that white flour raises blood sugar more than other types of flours from other grains, and listed the GI values of several types of breads – all of which fall within a very similar range – to bring the point home.. “There is certainly merit and value to…suggestions of flours to use to enhance whole grain consumption.. However, by taking an approach based on vilifying a food that has so dramatically impacted public health, [the article] is misleading readers and communicating information not based on sound science,” Ms..
